5 Primo Popsicle Recipes to Make this Summer

Painting by Julie Ann McKevitt

Dusty and I finally ordered popsicle molds! We could decide between this or that one, so we used some credit card points to justify buying two. I can’t wait for them to arrive, so I thought I’d start a roundup of recipes I’m dying to try. Homemade pops can seem like such a decadent treat, when many recipes are actually pretty healthy! Three cheers for our frosty childhood friend!

Is there anything more summery tasting than strawberries and cream? I love the addition of rhubarb. My grandma was big into rhubarb. My dad always smiles pretty big when talking about her rhubarb desserts. I may have to make these for him!

STRIPED BERRY BUTTERMILK POPSICLES VIA BROOKLYN SUPPER

Red and white striped pops never looked so good! The redish purple of berries makes my mouth water. (I am so over those iconic red food dyed pops.) The berries, buttermilk and cream cheese align for the perfect not-too-sweet summery treat.

BLUEBERRY POLKA DOT FRO-YO POPS VIA HANDMADE CHARLOTTE

Okay, I may be a little biased. When I saw these pictures in my inbox at Handmade Charlotte, I was all kinds of Heart Eyed Emoji. Only 3 ingredients people! Three! I repeat - three! That’s something even I couldn’t mess up! Definitely making these.

PALEO CANTALOUPE MINT PALETA VIA RUBIES AND RADISHES

I’m not even close to being  on a paleo diet, but this simple recipe caught my eye. I’ve been all about adding herbs to recipes. I have two gorgeous lavender plants going strong, but I can't seem to grow mint. Turns out, squirrels eat mint - all of the mint. Even those furry little jerks like to have fresh breath. One day soon, I’ll master the mint in an indoor window box perhaps.

PALOMA SORBET VIA BELINDER

Okay - technically not a popsicle, but just as delicious looking. What can you get with tequila, besides a margarita? A paloma is the answer, my friend. Love seeing my summer go to drink in frosty form! We’re going to make this to hold us over until the popsicle molds arrive. Cheers to a happy summer!
